Manufacturing process

The olives are harvested in late October, early November. They are picked by hand. Olives that naturally fell from the trees are not used. These are in fact too ripe. We also do not use modern shaking machines that could damage the trees. Our olive oil is then pressed within 5 days. The olives are kneaded and pressed with an old-fashioned mortar press. No heat is involved, creating a pure organic extra virgin olive oil. The olive oil is only filtered, so that it produces a nice clear, yellowish-greenish liquid.
